Red Yeast Rice is made by fermenting whole kernel cooked rice with added red yeast. This is the same substance that gives Peking duck its red color. Red yeast rice has been used as a food preservative and a spice, since about 400 A.D. in China. It has also been used in Oriental medicine to relieve diarrhea and indigestion, and to improve circulation of the blood since about the same time.
